I bought one with 8TB and possible places for converting video on the dedicated x go watch the converted on dedicated y?

Your hard drive is fine for encoding videos. Just make sure you have enough RAM/memory and a good CPU. If you have 4+ GB of RAM then you will not have any problens encoding videos.
